200g raw kale
1 small red chilli
1 tsp honey
1½ tsp dark soy sauce (low sodium)
1 tbsp crunch peanut butter
¼ tsp Chinese five spice
1 clove garlic
Olive oil cooking spray
Method:
1. Finely chop the chilli and garlic, combine in a bowl with honey, peanut butter, soy sauce and five spice. Mix well.
2. Place kale leaves in a bowl and spray with a few sprays of olive oil cooking spray, to lightly coat
3. Add the spiced satay to the leaves and mix gently until covered
4. Bake in preheated oven (180 oc /160oc fan) for 15-20 minutes until crispy.
5. Garnish with sliced chilli if desired.
