This dessert has the warming comfort of a wintry pudding whilst giving you a portion of your five a day and helping you to use up those bananas that have been sitting in your fruit bowl too long. The brandy adds a festive touch. You could serve it with a scoop of ice cream if you prefer.

Ingredients - serves 4

30g/1oz butter
4 x 170g/6oz bananas, peeled and cut into diagonal chunks
Zest and juice from one large orange
2 tbsp orange liqueur
3-4 tbsp brandy, as desired

Preparation time: 5 minutes
Cooking time: 5 minutes


1. Melt the butter gently in a large non-stick frying pan, taking care not to let it brown. Add the orange juice and warm through.

2. Add the bananas, and cook for a couple of minutes, using two wooden spoons to gently turn them over. (Don't worry if they break up, they'll still taste the same!).

3. Add the orange zest, raising the heat, so that the mixture thickens a little.

4. Warm the orange liqueur in a separate pot, pour it over the bananas, then remove the pan from the heat and add the brandy. Put the pan back onto the heat and set light to the pan to flambé them. Serve immediately.
