This salad is a little different from most salads. It works well as a nutritious mid morning snack and it is a great way of getting a few extra fruit portions.

1 apple sliced
1 baby gem lettuce
1 ripe banana
1 orange
1 tbsp flaxseed
1 tbsp desiccated coconut
Juice of 1 orange
1 tbsp cashew butter

1. Mix together the orange juice and cashew butter.
2. Wash and roughly chop the lettuce
3. Peel the orange and separate into segments
4. Peel and slice the banana
5. Core and slice the apple.
6. Mix the lettuce and fruit and sprinkle with coconut and seeds before drizzling with dressing.
