2 red peppers
2 green peppers
1 cucumber. deseeded
3 red onions
3 large beef tomatoes
4 sprigs of fresh oregano
Dried mixed herbs
5ML white wine vinegar
15ML olive oil
1 garlic clove
300GM feta
2 TBS parsley
Salt and pepper

1. Finely slice the peppers and onions, add to a large bowl

2. Peel the cucumber; cut in ½ length ways and scoop out seeds, add to bowl

3. Chop the tomatoes into cubes, add to bowl finely chop the oregano,add to bowl

To make the dressing:
Combine the vinegar, oil, crushed garlic and seasoning pour over salad and toss well until all is covered Cube feta or crumble over salad garnish with fresh chopped parsley
