A simple and delicious summer salad. It is very quick and easy to put together using simple flavourful ingredients to produce a refreshing side dish.

 

Ingredients (serves 4)

2 mangos, peeled and cubed
Juice of 1 Lime
½ red chilli deseeded and finely chopped
Large handful of mint, finely chopped

 

 

Method:
1. Combine the lime juice, chilli and mint in a bowl and whisk to mix

2. Add the Mango and toss gently to coat and serve.
