1) Cook couscous as per packet instructions.
2) Grill the fish for 4-5 mins until cooked through.
3) Boil peas in the minimum amount of water needed for 2-3 mins until cooked.
4) Combine the tomatoes, onion, egg, chorizo, peas, lemon juice and zest in a bowl, mix briefly before adding the couscous and stir through.
5) Serve the couscous with the fish laid over the top.
