Smoked haddock with couscous is a healthy dish that is quite easy to prepare. This recipe is great when you are limited for time, but want to eat something filling and highly nutritious.

Ingredients (serves 4)

100g frozen peas
30g chorizo, chopped
6 spring onions, sliced
1 lemon, juice and zest
3 large tomatoes, roughly chopped
3 boiled eggs, quartered
250g couscous
500g smoked haddock

Method:
1) Cook couscous as per packet instructions.

2) Grill the fish for 4-5 mins until cooked through.

3) Boil peas in the minimum amount of water needed for 2-3 mins until cooked.

4) Combine the tomatoes, onion, egg, chorizo, peas, lemon juice and zest in a bowl, mix briefly before adding the couscous and stir through.

5) Serve the couscous with the fish laid over the top.
