Spicy Peanut Noodles

This dish does not compromise on flavour with fresh herbs, chillies and an additional dressing. Beans and peppers make this a high fibre choice; noodles provide a source of carbohydrate energy and sesame seeds are a good source of calcium and other minerals. This dish could be a good choice both before and after surgery.

Ingredients: (Serves 6)

Main

Good handful mange tout
Good handful French beans
1 red pepper
1 green pepper
1 pkt medium egg noodles
2 tbs roasted sesame seeds
2 red chillies
2 green chillies
1 bunch spring onions
½ bunch basil
½ bunch coriander

Dressing

1/3 cup sesame oil
1/3 cup soy sauce
1/3 cup mirin (rice vinegar)
1 tbs grated ginger
1 tbs chopped garlic
2 tbs coarse peanut butter

Instructions:

1.Quickly blanch the mange tout & beans in boiling water, drain and refresh in cold water

2.Finely slice the peppers, deseed and finely slice the chillies

3.Slice spring onions

4.Drop the noodles into boiling water and cook for 3 mins, drain and refresh, add 2 tbs sesame oil to prevent it from sticking

5.Chop the basil and coriander

6.Combine all the salad ingredients and gently stir, hands are best for this

7.To make the dressing put all ingredients into a jug and whisk gently with a wire whisk, pour over salad and toss lightly

8.Serve sprinkled with toasted sesame seeds
