Classic lamb kofta

This classic recipe is great for a barbeque but works just as well in the grill. Koftas are middle-eastern spiced meatballs, which go great with fresh salad. This is also a great inexpensive and healthy alternative to a takeaway kebab.

Ingredients: (Serves 4-5)

75g Bulgur wheat
450g Extra lean minced lamb
1 small Onion (100g)
3 tsp Paprika
2 tsp Ground cumin
Small handful fresh mint (or parsley)
Small pinch of salt and pepper

Preparation time: 30min
Cooking time: 12min

Instructions:

1. Soak the bulgur wheat according to the pack’s instructions (usually around 30mins) drain and try to remove as much water as possible.

2. Blitz the onion in a food processor with the spices and season lightly. Add the lamb and blitz again. Finally add the bulgur wheat, herbs and mix.

3. Divide the mixture into balls, from this recipe you should get around 12 balls.  Place on metal skewers and grill or barbeque for approximately 10-12 minutes until cooked through, turning occasionally.

Serve with pitta bread, salad and hummus
