If you’re staying at home this summer, there’s still a way to enjoy healthy holiday cuisine. Have a go at this super easy Mediterranean salmon. You simply coat salmon fillets in olive oil, garlic, coarse mustard seeds and lime juice and then grill till lightly cooked. Team it up as shown in the picture and you could get your five-a-day fruit and veg in one sitting!
Ingredients (serves 4)
4 salmon steaks, each about 175g/6oz
Juice of 2 limes
15ml/1tbsp olive oil
2 heaped tsp. coarse grain mustard
2 garlic cloves, crushed
A little salt and freshly milled black pepper
1. Place the salmon fillets in a non-metallic dish. Make a sauce by mixing together the lime-juice, olive oil, mustard, garlic and seasoning.
2. Pour the sauce over the salmon, turning to coat. If marinating, cover and leave in the refrigerator for 30 minutes.
3. Preheat the grill. Lift the salmon out of the marinade and place on a foil-lined grill pan. Coat the salmon with the sauce and grill under a moderate heat for about 4-5 minutes each side.
