Nutrition and Hydration Week

14 – 20 June 2021

This national awareness event which is celebrated around the country every year between 14-20 June, aims to help people understand the importance of nutrition and hydration in health and social care. It promotes a number of measures to enhance patient wellbeing including protected meal times to allow patients to eat meals undisturbed. In addition, it promotes the minimum standards for good nutrition in all settings and advises 10 key characteristics for good nutritional care.

To celebrate this event we have chosen five delicious and healthy recipes for you to enjoy from our Healthy Living recipe library. 

Thai Green Tofu Noodles

Tofu is a low-fat meat alternative made by coagulating soy milk, and marinating it in curry paste allows it to take on the flavours of the curry. A stir-fry is a great way of incorporating lots of vegetables into a meal.

Feta and Watermelon Salad

The watermelon gives this salad a very refreshing quality, which contrasts beautifully with the dry taste of the feta. This salad can be served as a side dish or as a healthy snack.

Artichoke Salad

This artichoke salad is low in saturated fat and cholesterol which does not compromise on flavour with lemon juice, wine vinegar and garlic. Artichokes are a good source of niacin, vitamin B, iron, phosphorus, potassium, folate, magnesium and a very good source of dietary fibre.

Greek Bean Bake

This is an easy version of a flavourful Greek dish and is a great side dish for barbecues. Beans are an excellent choice for a low fat, high fibre source of protein.
