Seafood Linguine

This seafood based dish is very quick to cook and requires very little preparation. It can be prepared in around 20 minutes, tastes great and is full of nutrients. 

Ingredients: (serves 2)

4 king prawns, shells off and tract out
6 frozen mussels
1 baby squid, sliced into rings
1 tsp pureed garlic clove
½ sliced thinly red onion
½ red chilli, de-seeded and sliced thinly
1 tsp dried cherry tomatoes
40 ml White cooking wine
20g unsalted butter diced
10g baby leaf spinach
1 tsp chopped Parsley
100g linguine

Instructions:

  1. Cook linguine in a pot of boiling, salted water, once cooked refresh under running cold water. Place a fresh pot of water on the stove and bring to the boil.
  2. Place a pan on a medium to high heat with a little of the butter. Add the garlic, onions and chilli and cook until soft, then turn to a high heat and add the prawns and mussels. Continue to stir whilst cooking until the prawns start to turn pink (approx 2 minutes) then add the squid and the dried tomatoes.
  3. Add the white wine to the hot pan and allow to reduce by half, then add the butter and spinach.
  4. Place your cooked linguine in the pot of boiling water for 2-3 minutes or until hot then add this to your sauce.
