Spicy Scrambled Egg

This quick breakfast is a spicy take on scrambled egg and a great way of getting an extra one of your 5-a-day.

Ingredients: (Serves 2)

4 eggs, beaten
Splash of milk
120g cherry tomatoes, halved
4 spring onions, chopped
1 small chilli, deseeded and finely chopped
1 tsp ground cumin
½ ground coriander
Olive oil spray


1. Add the spring onions, chilli and tomatoes to a non stick pan sprayed with oil and sprinkle with the spices, fry  for 1-2 min.

2. Add splash of milk to the eggs mix and add to the pan on a medium to high heat.

3. Once the eggs reach the desired consistency, serve on toast.
