It is coming up to that time of year when the allotment is producing more fruit than you can eat. This recipe is a great way of using up the ones which don’t make it home in such great shape, and it’s also egg free. If you are underweight or struggling to gain weight but have a poor appetite, ice cream is a good way of getting extra calories in your diet.

Preparation time: 10mins + freezing time 

Ingredients 

500ml double cream
500ml full fat milk
200g sugar
1.5 tsp vanilla extract
Pinch of salt
450g raspberries.
Requires Ice-cream maker

Method:
1. Combine the sugar, milk, cream and vanilla extract in a bowl and whisk to mix well.

2. Lightly mash the berries.

3. Add the berries (and their juices) to the cream mix. Stir and refrigerate for 20mins.

4. Pour the mix into the ice cream maker. Churn in the ice cream maker for 20minutes or as per the ice cream maker’s instructions. Transfer to freezable container and freeze for 4 hours.
