1 small cucumber (300g)
1 red onion (90g)
4 large tomatoes
250g watermelon
50g feta cheese, cubed
1 tsp mint leaves, finely chopped
2 tbsp Red wine vinegar
Pinch Salt & Black pepper
3 tbsp Olive oil
Method:
1. Whisk together the vinegar and oil and season with small pinch of salt and pepper.
2. Peel the cucumber, and halve length ways, remove the seed and thickly slice
3. Thinly slice the onion
4. Chop the tomato into small chunks
5. If using whole melon, peel and de-seed and chop into bite sized chunks.
6. Combine all ingredients in a bowl and coat with dressing, serve immediately.
