These ice lollies are a healthier alternative to your average shop bought lolly and are packed full of vitamins and minerals. A range of flavour combinations work here, we have gone for cucumber and mango, and banana and blueberry.

Ingredients (makes 5 - 6 of each favour)

Cucumber and mango (green)

½ cucumber,
1 medium mango
Handful flat leaf parsley
Small handful fresh spinach
Juice of 1 lime
1 tsp honey

Banana and blueberry

2 ripe bananas
Juice of 3 oranges (or 100ml orange juice)
250ml of rice milk
1 tsp vanilla extract
Large handful of  blueberries*

Method:
1. Put all ingredients* in blender and blitz until smooth

*If you are making the banana and blueberry popsicles, do not add the blueberries to the food processor, just place around 5 berries in each lolly mould and pour blitzed mixture on top.

2. Pour mixture into the lolly modules and place in freezer for 3 hours until frozen through.
