2 whole trout, gutted washed
3 sprigs rosemary
Large bunch parsley
Half a slice lemon
1 lemon
Salt and pepper
2 tbsp oil
Method:
1. Thinly slice half a lemon and roughly chop the herbs
2. Mix the lemon, lemon zest and herbs into the oil.
3. Lightly season the fish and stuff the lemon herb mix inside the fish, allow to rest and marinate for 30mins.
4. Wrap the trout in a foil parcel and cook on the barbecue for 6-7mins each side
5. Serve with potato and salad.
