Savoy cabbage is a good source of thiamine, calcium, phosphorus, copper, dietary fibre, Vitamin A, Vitamin C, Vitamin K and Vitamin B6. Pine nuts are low in cholesterol and sodium and are a very good source of manganese for normal functioning of the human body. Parmesan cheese is a good source of phosphorus, and a very good source of calcium. Olive oil contains polyunsaturated and monounsaturated fats, which are a better option for a healthy heart.

Ingredients (serves 4)

½ Savoy cabbage
½ white onion
1 bunch trimmed spring onions
½ bunch parsley
½ bunch basil
Salt & pepper
100gm parmesan cheese
3 tbsp fresh lemon juice
9 tbsp olive oil
50g pine nuts

Method:
1. Trim the cabbage and remove stalk, finely slice, and put into a large bowl.

2. Finely slice the onions and add to cabbage.

3. Chop parsley & basil and add to cabbage mix.

4. Season well.

5. Sprinkle with parmesan and mix well.

6. Put the lemon juice and olive oil into a jug and whisk until incorporated, add to salad and stir well.

7. Sprinkle with pine nuts and serve.
